We'll gather for this dinner at our Sunset Park farm.
This July, we’re cooking up a meal with a purpose! The Compost Dinner aims to create local networks that serve each other, and we’ve got room for you at the table- join us for a dining experience where everything from the tables at which you’re seated, to the napkin on your lap, the food on your plate, and the drink in your glass, has a unique story. In order to implement real, sustainable practices we must first acknowledge the fact that there will always be some waste(d) products- whether in the form of water, organic matter, or single-use items What matters, though, is how we reimagine those products; the systems we create for (re)distribution and access in solidarity with, rather than at the expense of, our communities. We’re ready to serve up a new and nourishing version of this planet’s future and we invite you to write this recipe with us!

Now for the facts...Chew on this: NYC collects over 3 million tons of “trash” and recycling every year from residents alone. Over 30% of that waste is compostable while 10% could be donated or reused. Which is to say, it might be wasted, but it’s certainly not trash! Not to mention, it costs us over 300 million dollars to ship waste out of state- to other landfills!
Here’s something that's hard to swallow: In the United States alone, we throw out almost 40% of our food supply. Simultaneously - there are nearly 1.5 million New Yorkers currently experiencing food insecurity, including one in four children. This issue has only been exacerbated by a pandemic and a climate crisis. We are tossing billions of pounds of fresh and nutritious food into landfills because we lack the distribution networks needed to care for our communities. Why is it that while there is an abundance out there for folks to be fed, we still have a global hunger crisis?
Just to ice the cake, we are in the midst of a climate crisis - Conversations about circular economies aren’t complete without mentioning access and impact. The climate crisis will significantly impact communities of low-income and reduced access. In New York City, that means that 15% of our city's population will suffer the consequences of a changing climate. We need radical solutions to combat this inequity.
Seven years ago, when we were envisioning an event that would reimagine our food system, we met Winston Chiu of BonBite and More Than a Meal. Early editions of Compost Dinner focused mainly on creating a meal from food headed towards the compost bin. We reused stale bread, repurposed scrapped fish parts, and transformed leftover market veg into a feast. Each year since then, the menu has become an ever more exquisite celebration of ingredients, and the ecosystem of organizations working together has deepened the dinner's impact and reach, emphasizing our goals for care-focused circular economies.
If you have an appetite for change, we invite you to join us in stirring this pot. On the menu this year: renewing our goals to reclaim the food we call “waste”and cultivating strong local food systems in collaboration with community partners and mission aligned businesses. This year, 10% of ticket sales will go to More Than a Meal, an organization that partners with restaurants and food providers to offer a dignified experience for those in need of food support.
A team of chefs, all working towards food access in our city will bring you this elevated meal: Winston Chiu of More Than a Meal and Helen Nguyen of Saigon Social. Other partners and sponsors we'd like to thank: Patina Rentals, Package Free Shop and Fresh Direct.
Entrees will be served family style.
ABOUT THE FARM DINNERS: This dinner series is our way of celebrating our farmers, the talent of our favorite NYC chefs and local makers, and our love for food, community, and environmental sustainability. Growing food is a major part of our operation at Brooklyn Grange but our favorite part of what we do is being able to commune with you on our roofs! We invite you to gather, eat and learn with us at one of our four dinners: Veggiepalooza, a multi-course vegetarian feast, Sky High Tomato Dinner, an ode to our favorite nightshade, the Compost Dinner, a food waste focused and thought-provoking dining experience, and Pollinate Your Plate, a dinner, and love letter, highlighting the living landscape of our city!
