Salt saves the season with Chef Rose Wilde. 

Learn all about humanity's oldest preservation ingredients - SALT.  We'll explore dry direct preservation and wet brine techniques to cure, pickle and save the bounty of the farm. 

Emphasis will be on exploring salt ratios, preparing and maintaining sterile fermentations, short term flavor manipulation, and long term usage in daily meals.  We will also discuss how to use various ferments to inoculate others. 

Participants will take home their own farm fresh ferments!

Our workshops and events are available at a sliding scale. We invite you to practice economic solidarity with your community and choose the ticket tier that makes most sense with your financial situation.

  • This tier is at the market rate and reflects the true cost of the service, labor and expertise of producing the workshop/event. This price point allows us to generate a profit. We encourage those with access to wealth to opt for this tier as it enables Brooklyn Grange to offer more tickets at an accessible price.

  • This tier reflects the cost of our service labor and expertise required to produce the workshop/event and allows us to make a small profit. We encourage those to opt for a Sustainable Ticket if the price point of a General Ticket is prohibitive.

  • This ticket tier reflects our intention to make our events open for all! We want all members of our community to enjoy Brooklyn Grange no matter their financial situation. Opt for the Solidarity ticket if General or Sustainable is not accessible to you right now.


About Rose Wilde:

Rose Wilde is the owner and fermenter behind Red Bread, an award winning whole grain farm to table food company in Los Angeles. Rose has worked as the pastry chef of Motherwolf, Rossoblu, Rustic Canyon, and Manuela in Los Angeles. Rose has also staged at State Bird Provisions SF, Elske in Chicago, and V. Miller Meat Whole Animal Butchery Sac. Rose has been a regular on Hallmark's home & family channel, the cooking channels Food: Fact or Fiction?, and Chopped Sweets. Rose has a special on tastemade called Wilde Flour and maintains a dynamic baking group called Baking Wilde with Demi Community. Rose previously worked as a human rights lawyer but has always been captivated by food. She is committed to understanding the science, art, and magic of real food treated with care. Rose is a passionate chef, baker, master food preserver, and is actively involved with food justice issues.
