We’ll take a broad look at fungi and cultivation techniques before diving deep into low tech, at-home methods you can implement in the city or elsewhere. In celebration of cyclical waste reduction, we’ll use house-hold waste products like cardboard and coffee grounds to make our own oyster mushroom grow-kits to take home. You can watch the mushrooms double in size in one day. We’ll also learn how to harvest and prepare your oyster mushrooms through a cooking demonstration and tasting.
We aim to empower you to grow and cook your own mushrooms at any scale for years to come!

About John Michelotti:
John Michelotti is the founder of Catskill Fungi which empowers people with fungi through outdoor educational classes, cultivation courses, mushroom art, and mushroom health extracts. John is a former President of the Mid-Hudson Mycological Association (MHMA). He serves as Medicinal Mushroom Committee Chair and is a Poison Control Consultant for the North American Mycological Association. He is an instructor for the Wild Mushroom Food Safety Certification courses in NY. He was chosen by the Catskill Center as a "Steward of the Catskills" for his contribution to the environment. His goal is to educate and inspire people to pair with fungi to improve the environment, their health, and communities.
